Ever wondered why do you hear this sizzling sound while frying? Most dishes, whether meat or vegetable, contain some amount of fat and water. Or are prepared in fat such as a frying pan coated with oil. When water is released by meat, vegetables, or whatever, very tiny droplets are sweated out of the food. Because water boils at much lower temperature than oil, the droplets are instantly vaporized, making a popping sound that splatters (jumps out and hits) oil. Many of these popping sounds combined create the effect if sizzling sound in our ears. Anyways, pakoda are frying and they will soon go into the Punjabi kadhi.
