We make this all the time when we don’t have vegetables at home. Just need tomatoes and besan sev to make this quick sabjee and it tastes so amazing with fulka chapati, you just don’t need anything else.

  1. Method

    • Heat up the pan, pour 1.5 tbsp oil
    • Add 1 tsp cumin seeds (jeera)
    • Add 1 tsp mustard seeds (rai)
    • Add 1 small grated ginger knob
    • Add chopped green chillies (as per taste)
    • Add some curry leaves
    • Add 2 medium sized tomato puree (coarsely ground)
    • Add salt as per taste
    • Add 1/2 tsp turmeric powder (haldi)
    • Add 1.5 tsp coriander (dhaniya) powder
    • Add 1 tsp red chilli powder
    • Add 1/2 tsp garam masala (optional)
    • Saute until tomato start releasing oil
    • Now add approx 1 cup water
    • Then add 4 medium sized finely chopped tomatoes
    • Cook until one boil and tomatoes are soft
    • Add a spoon of jaggery (gud - optional)
    • Let the jaggery melt
    • And turn off the heat immediately
    • Now to serve this sabji, add thick sev in it
    • Add some chopped coriander leaves and mix it
    • Take it in a serving bowl and serve with Phulka Chapati
    • Enjoy your Luscious Sev Tomato ki Sabji!!!
