In Gujarat, we love these kind of instant Mirchi Achaar made from less spicy chillies; goes well with roti, paratha, bhakhri or even Khakhra. Must try.

  1. Method

    • Rinse and wipe approx 200 gm fresh green chillies 
    • (use type of chillies as per taste)
    • Remove the crowns and cut them into small bite size pieces
    • Take all pieces in a bowl
    • Add salt as per taste and mix it
    • Now heat approx 3 tbs oil and keep it aside
    • Dry roast below ingredients to make masala
    • 1.5 tsp fennel seeds (saunf)
    • 1 tsp cumin seeds (jeera)
    • 1 tsp ajwain
    • 1 tsp fenugreek seeds (methi)
    • 1 tbs black / yellow mustard seeds (rai)
    • Transfer roasted mixture in a bowl
    • Let it cool down and grind to the coarse mixture
    • Further in the bowl of chillies, add 1 tsp turmeric powder (haldi)
    • Add 1 tsp onion seeds (kalaunji)
    • Add a pinch of asafoetida powder (hing - optional)
    • Add masala mixture
    • Add 2 lemon juice (2 tbs vinegar is optional)
    • Now add warm oil into this mixture
    • Mix everything well
    • (If you like, add garlic in this achar)
    • Your Spicy & Tangy Mirchi ka Achar is ready!!!
    • Keep it for couple of days and then serve it to taste best
    • (store in refrigerator for 15-20 days in an air tight glass container)
