Aloo Ki Sukhi Sabzi

Ingredients

2 tbs oil
3 boiled potatoes - cut in cubes
1 tsp Rai ke daane (Mustard seeds)
1/2 tsp Jeera (Cumin seeds)
1/2 tsp Hing powder (Asafoetoda)
Few green fresh curry leaves
2 chopped green chillies
1 tsp Haldi powder (Turmeric powder)
1/2 tsp sugar
Salt per taste
1/2 freshly squeezed lemon juice
Chopped coriander leaves

Method

Method
In a pan take 2 tbs oil
Keep boiled potatoes (aloo) ready and cut in cubes
Add 1 tsp Rai (Mustard seeds) and wait for the crackling sound
and then add 1/2 tsp Jeera (Cumin seeds)
Now add 1/2 tsp asafoetida (Hing powder)
Adding asafoetida helps digestion as potatoes can be a bit heavy to digest sometimes
Add few curry leaves
We are not going to add onion or garlic.
Add chopped green chillies
Add 1 tsp turmeric powder (haldi)
Mix it well
Time to add potato cubes
Add some salt per taste
Add 1/2 tsp sugar
Add 1/2  lemon juice
Mix well
Cover with lead and let it cook for 5-10 minutes on slow flame
We want potatoes to absorb all the flavors
So that's it aloo sabjee is ready
Sprinkle some freshly chopped coriander leaves
Finally, mix and serve it with Puri or Roti or Bread
