Bedmi Paratha with Aloo Sabzi Recipe

Bedmi Paratha & Aloo Sabjee: Inspired from famous North Indian Bedmi Poori, have made it a bit healthier by converting into Bedmi Paratha with the North Indian Flavored Aloo Sabzi.

How to make Bedmi Paratha with Aloo Sabzi ?

Ingredients

  • 1 cup urad dal (split & skinless lentils).
  • 1 tsp crushed fennel seeds (saunf).
  • 1/2 tsp asafoetida powder (hing).
  • 1 tsp turmeric powder (haldi).
  • 1 tsp coriander & cumin seeds powder (dhaniya – jeera powder).
  • Red chilli powder (as per taste).
  • 1.5 tsp garam masala.
  • 1.5 tsp amchur powder.
  • Approx / less than 1/4 cup water.
  • 1.5 cup wheat flour.
  • 2 tbs semolina (suji /rava).
  • Salt as per taste.
  • 1 tbs oil/ ghee.
  • Some kasuri methi (crush with hands).
  • 1 tsp ajwain (crush with hands).
  • Water.
  • 2 tbs oil.
  • Some cumin seeds (jeera).
  • 3 finely chopped green chillies.
  • 1 small finely chopped ginger knob.
  • 3 finely chopped tomatoes.
  • 3 medium sized roughly chopped boiled potatoes.
  • Chopped coriander leaves.

Method

How to make?

To Make Paratha Stuffing :

  • In mixie take 1 cup urad dal (split & skinless lentils – wipe with clean wet napkin).
  • Grind to make powder & transfer in a bowl.
  • Add 1 tsp crushed fennel seeds (saunf).
  • Add a pinch of asafoetida powder (hing).
  • Add 1/2 tsp turmeric powder (haldi).
  • Add 1 tsp coriander & cumin seeds powder (dhaniya – jeera powder).
  • Add red chilli powder (as per taste).
  • Add 1 tsp garam masala.
  • Add 1/2 tsp amchur powder.
  • Add approx / less than 1/4 cup water.
  • Mix it well to make thick dry stuffing.

To Knead Dough :

  • In a mixing bowl take 1.5 cup wheat flour.
  • Add 2 tbs semolina (suji /rava).
  • Add salt as per taste.
  • Add 1 tbs oil/ ghee.
  • Add some kasuri methi (crush with hands).
  • Add 1 tsp ajwain (crush with hands).
  • Add water and start kneading.
  • Knead a soft dough.
  • Apply some oil on it and rest for a while.

To Make Aloo Sabji :

  • Heat up the pan, pour 2 tbs oil.
  • Add some cumin seeds (jeera).
  • Add a pinch of asafoetida powder (hing).
  • Add 3 finely chopped green chillies.
  • Add a small finely chopped ginger knob.
  • Add 3 finely chopped tomatoes.
  • Add salt as per taste and mix it.
  • Add 1/2 tsp turmeric powder (haldi).
  • Add red chilli powder (for color).
  • Add some garam masala and mix it.
  • Cover the lid and cook for 5-7 min.
  • Add 3 medium sized roughly chopped boiled potatoes.
  • Add some spoonful of water.
  • Add 1 tsp amchur powder.
  • Bring it to a boil.
  • Add chopped coriander leaves in the end.
  • And turn off the heat.

Further roll out some balls from the dough.

  • Apply a drop of oil on rolling board.
  • Flatten with the help of rolling pin.
  • Add 1 spoon of stuffing in the middle of paratha.
  • Cover stuffing with corners.
  • Roll it further to make thick paratha.
  • Now heat up the pan.
  • Place paratha on it.
  • Roast from both the sides applying oil on it.
  • Roast until it turns golden-brown
    (Make more parathas with the same procedure).
  • And then enjoy your Yummiest Bedmi Paratha & Aloo Sabji!!!
