Beautiful season & beautiful baingan, just had to make this traditional Bharwa Baingan ki Sabzi, my mom loves it and this one is especially for her.
Ingredients
- 8 Eggplant (Baingan), slit and soak in water
- 1/4 cup mildly roasted Peanuts
- 1/4 cup Sev (alternatively 2 tbs dry roasted besan can be used)
- 1 tablespoon Coriander Seeds (Dhaniya)
- 1 tablespoon Dry Coconut
- 1 tablespoon Fennel Seeds (Saunf)
- 1 teaspoon White Sesame Seeds (Safed Til)
- 1 teaspoon small Cinnamon Sticks (Dalchini)
- 1/2 teaspoon Dhaniya-Jeera Powder
- Pinch of Turmeric Powder (Haldi)
- Red Chilli Powder (as per taste)
- 2 teaspoons Sugar (optional)
- 1/2 teaspoon Garam Masala
- Salt as per taste
- 1 tablespoon 2 tbs Oil
- 1 teaspoon Cumin Seeds (Jeera)
- 1 teaspoon Mustard Seeds (Rai)
- 1 small Cinnamon Sticks (Dalchini)
- 3 Bay Leaves (Tej Patta)
- 2 Dry Red Chillies
- 1 teaspoon White Sesame Seeds (Safed Til)
- 1/2 teaspoon Fennel Seeds (Saunf)
- Pinch of Asafoetida Powder (Hing)
- 1 finely chopped small Ginger Knob (optional)
- 2 medium sized finely chopped Tomatoes
- Salt as per taste
- 2 pinches Pinch of Turmeric Powder (Haldi)
- 1/2 teaspoon Dhaniya-Jeera Powder
- Red Chilli Powder (as per taste)
- Some big Green Chillies, cut into pieces (optional)
- 1 cup Water
- Some Green Peas
- Freshly chopped Coriander
Instructions
- Method
- To Make Masala:-
- 7-8 Eggplant (Baingan), slit, soak in water and keep aside
- Take a mixer jar
- Add 1/4 cup mildly roasted Peanuts
- Add 1/4 cup Sev
- Add 1 tbs Coriander Seeds (Dhaniya)
- Add 1 tbs Dry Coconut
- Add 1 tsp Fennel Seeds (Saunf)
- Add 1 tsp White Sesame Seeds (Safed Til)
- Add 1 small Cinnamon Stick (Dalchini)
- Add 1/2 tsp Dhaniya-Jeera Powder
- Add a pinch of Turmeric Powder (Haldi)
- Add Red Chilli Powder (as per taste)
- Add 2 tsp Sugar (optional)
- Add 1/2 tsp Garam Masala
- Coarsely grind to make masala
- Add Salt as per taste and mix it
- Fill this masala into Baingan one by one
- (Keep remaining masala aside to use in sabji)
- To Make Sabji:-
- Add 2 tbs Oil
- Add 1 tsp Cumin Seeds (Jeera)
- Add 1 tsp Mustard Seeds (Rai)
- Add 1 small Cinnamon Stick (Dalchini)
- Add 3-4 Bay Leaves (Tej Patta)
- Add 2 Dry Red Chillies
- Add 1 tsp White Sesame Seeds (Safed Til)
- Add 1/2 tsp Fennel Seeds (Saunf)
- Add a pinch of Asafoetida Powder (Hing)
- Add 1 finely chopped small Ginger Knob (optional)
- Fry well and add 2 medium sized finely chopped Tomatoes
- Add Salt as per taste
- Add a pinch of Turmeric Powder (Haldi)
- Add 1/2 tsp Dhaniya-Jeera Powder
- Add Red Chilli Powder (as per taste)
- Fry until tomatoes get mushy
- Add some big Green Chillies, cut into pieces (optional)
- Add churned Masala
- Add 1/2 cup Water and mix it
- Add stuffed Baingan (add water if gravy is too thick)
- Cover the lid and let it partially cook
- Then add some Green Peas
- Cover the lid and cook for another 10 min
- Add finely chopped Coriander in the end
