    Burnt Garlic Rice with Stir-Fried Vegetables (Note: Jasmin Rice is usually sticky so its not overcooked rice but a very different variant of rice i bought from Asia).

    Lockdown lasted a little longer than anticipated. But no problem; we are not going to miss the street Chinese food anymore. Try this combination of stir-fried vegetables with burnt garlic rice. Just 3-4 spoons of oil are good enough for family and many vegetables- don’t overcook it; enjoy vegetable crunch when you have them with rice, and the pineapple juice twist you can thank me surely. (In between for 20 seconds due to some technical issue voice is not coming clearly, but have given you subtitles so should be ok; sorry about that).

    Process to make Burnt Garlic with Mix Vegetable Rice

    Ingredients

    My Secret

    • Oil
    • Finely chopped garlic
    • Salt
    • Black Pepper
    • Soy Sauce
    • Tomato Ketchup
    • Chopped onion
    • Green Chilli
    • Cauliflower chopped
    • Chopped French beans
    • Chopped Carrots
    • Chopped Green and Red Capsicums.

    Method

    How to make?

    • First, we will make burnt garlic rice.
    • In a pan, add 2 spoon oil, keep the high flame.
    • Add some finely chopped garlic.
    • Add black pepper.
    • Add Salt
    • As garlic turns brown, add carrot and rice.
    • Burnt garlic rice is ready; keep the pan aside.
    • Now we will make stir-fried vegetables.
    • Take 2 spoons of oil, let it heat up.
    • Add finely chopped ginger and garlic.
    • Add chopped onion.
    • Add green chilli. 
    • Let onion get cooked till they get soft.
    • Add french beans, carrots and let them cooked as they take time to cook so we put them first.
    • Once they start getting soft, add chopped cauliflower.
    • Toss veggies and cover the lead and let it cook for 5 minutes till all veggies get soft.
    • Don’t overcook veggies.
    • Add 3 tbsp soy sauce
    • Add 1 tsp Vinegar (Circa).
    • Add 1tbs tomato ketchup – it will give nice tangy-sweet taste to this dish
      (You can also add chilli sauce if you want to).
    • Add chopped tomatoes and some canned pineapple (or pineapple juice) will give a wonderful flavour.
    • Add green capsicum as it will take some time to cook.
    • Add 3/4th cup water, mix well.
    • Add little salt.
    • Add 2 tsp cornflour diluted in water
      If the gravy gets little thick then add little more water.
    • Add red capsicum and cabbage leaves.
    • Mix well; time to turn off the flame and plate Mix vegetable and burnt garlic rice.
    • Sprinkle some spring onions on rice and enjoy.
