How to make Chawal Muthiya Recipe?

Ingredients

  • 1 cup cooked rice.
  • Some finely chopped coriander, green chillies & ginger
    Ajwain, crushed with hands.
  • 1.5 tsp dhaniya jeera powder.
  • 1/2 tsp turmeric powder (haldi).
  • 1 tsp asafoetida powder (hing).
  • Salt as per taste.
  • 1/2 cup curd (dahi).
  • 1/2 lemon juice.
  • 3 tbs oil.
  • 1 cup wheat flour.
  • 1 tbs gram flour (besan).
  • 1 tbs semolina (suji – optional).
  • Water.
  • 1 tsp mustard seeds (rai).
  • 1 tsp sesame seeds(til).
  • 1.5 tsp Kashmiri red chilli powder.

Method

How to make?

  • In a mixing bowl take 1 cup cooked rice.
  • Add some finely chopped coriander, green chillies & ginger
    (Add vegetables as per your choice).
  • Add some ajwain, crushed with hands.
  • Add 1.5 tsp dhaniya jeera powder.
  • Add 1/2 tsp turmeric powder (haldi).
  • Add a pinch of asafoetida powder (hing).
  • Add salt as per taste.
  • Add 1/2 cup curd (dahi).
  • Add 1/2 lemon juice
    (Avoid using lemon juice if curd is too sour).
  • Add 1 tbs oil (for softness).
  • Add 1 cup wheat flour.
  • Add 1 tbs gram flour (besan).
  • Add 1 tbs semolina (suji – optional).
  • Add 2-3 spoon water and mix well with hands.
  • Apply some oil on palms.
  • Take 1/3 of this mixture and roll giving it a cylindrical shape.
  • Make 2 more rolls from remaining mixture.
  • Arrange these rolls in a food strainer greased with oil.
  • Keep some gap between each muthia roll.
  • Keep the strainer in 10 min pre heated steamer.
  • Cover the steamer lid with cloth.
  • Cook for 20 min on medium heat
    (Insert a knife in muthia to check if it’s cooked, if knife comes out clean, it’s ready).
  • Cut the rolls into pieces when it cools down.
  • Further for tempering heat up the pan.
  • Add 2 tbs oil.
  • Add 1 tsp mustard seeds (rai).
  • Add 1/2 tsp asafoetida powder (hing).
  • Add 1 tsp sesame seeds(til).
  • Add 1.5 tsp Kashmiri red chilli powder.
  • Fry for a minute and add muthia pieces.
  • Gently toss them.
  • Add some lemon juice in the end (optional).
  • Garnish with some fresh coriander.
