Crispy Khaja Sweet Recipe

Some sweets are just meant to be relished with eyes first before putting them through the taste buds. Khaja is one such traditional sweet. I have shown both sweet as well as namkeen versions

How to make Crispy Khaja Sweet Recipe?

Ingredients

  • 300 gm plain flour (maida).
  • Salt as per taste
    60 gm melted butter / ghee / oil (to knead dough) + Oil / ghee (for frying)
    1/2 cup + 1.5 cup water.
  • Corn flour (to dust on roti).
  • 300 gm sugar.
  • 2-3 cardamom (elaichi) powder.
  • Few drops of lemon juice.

For Namkeen Khaja Masala :

  • 1/2 tsp amchur powder, 1/2 tsp coriander powder, 1/2 tsp black salt, 1/2 tsp red chilli powder & salt to taste.
  • Some white and black sesame seeds (to garnish).

Method

How to make?

To Knead Dough :

  • Take a mixing bowl, add 300 gm plain flour (maida).
  • Add salt as per taste.
  • Add 60 gm melted butter / ghee / oil, gently mix it.
  • Add 1/2 cup water gradually and knead a soft dough.
  • Rest the dough for 5 min.
  • Again knead after 5 min to make it softer.
  • Cover dough and rest for more 15 min.
  • Cut dough ball into 4 equal portions.
  • Place a dough ball on kitchen platform/ silicon sheet.
  • Roll it thin and dust corn flour on flattened roti.
  • Make a roll of this roti.
  • Cut this roll into approx 1.5 cm small pieces.
  • Take a piece of roll, gently press with hand and by applying little pressure roll it thin with rolling pin
    (Make all Khajas ready for frying).

To Make Sugar Syrup :

  • In a pan, add 300 gm sugar.
  • Add 1.5 cup water.
  • Cook until syrup turns thicker, add 2-3 cardamom (elaichi) powder at this step.
  • Cook until it reaches to one string.
  • Turn off the heat and add few drops of lemon juice.

To Fry Khaja :

  • Heat another pan longside, pour oil / ghee for frying.
  • Add Khaja in heated oil.
  • Fry them in batches on low flame until golden-brown
    on both sides.
  • Remove Khaja from oil and cool them completely.

To Serve Namkeen Khaja :

  • In a small bowl, add 1/2 tsp amchur powder, 1/2 tsp coriander powder, 1/2 tsp black salt, 1/2 tsp red chilli powder & salt to taste.
  • Mix everything well.
  • Now to serve Namkeen Khaja take them on a serving plate.
  • Sprinkle some masala prepared on them.
  • Dip 5-6 Khajas in warm sugar syrup to serve Sweet Khaja.
  • Remove after 5 min
    Sprinkle some white and black sesame seeds on them.
  • Enjoy this Yummilicious Sweet Khaja & Crunchy Namkeen Khaja!
