Easy Mini Pavlovas Recipe

This is Egg-white based dessert. Very popular all over the world. Named after Russian Ballerina dancer Anna Pavlova when she visited Australia and New Zealand. Surprisingly, so easy to make with just few ingredients and sour fruits / berries and our own Mango.

How to make Easy Mini Pavlovas ?


  • 4 egg whites.
  • 1 cup caster sugar.
  • 2 tsp cornflour.
  • 1/2 tsp vanilla essence.
  • 1 tsp lime juice.
  • Whipped cream.
  • Some chopped mangoes & strawberries.
  • Passion fruit pulp (optional).
  • Some mint leaves.


How to make?

  • Take a big mixing bowl/ vessel to make meringue base for Pavlova (make sure the bowl is dry & clean).
  • Add 4 egg whites (take medium sized eggs and remove yolk).
  • With the electric beater, beat egg whites until soft peaks form (make it soft & fluffy).
  • Then add 1 cup caster sugar gradually and keep beating
    (start beating with medium speed and then on high speed until it forms stiff peak).
  • The peaks should be stiff enough that you can hold the whisk upright and the peaks won’t move.
  • Further add 2 tsp cornflour.
  • Add 1/2 tsp vanilla essence.
  • Add 1 tsp lime juice and mix gently with a spatula.
  • Take a baking tray, place parchment paper on it by applying some meringue on tray.
  • Spread the meringue into circle on it.
  • You can make decorative peaks with the help of spatula.
  • Make sure the edges are relatively tall and there is a dip in the center.
  • Place pavlova pre heated oven.
  • Bake for 1 hour at 120⁰ until the pavlova is firm and dry (keep the tray in oven for half an hour more after turning off the oven).
  • Further to decorate, add some whipped cream in the center.
  • Add some fresh fruits, chopped sour mangoes & strawberries.
  • Add some passion fruit pulp (optional).
  • And top with some mint leaves.
