Guvar Dhokli Ki Sabzi

Guvar (Cluster Bean) is one not a very popular vegetable especially amongst kids. But It’s really amaing when cooked with dhokli. We have this regularly in Gujarat especially during Summer-Monsoon season. Must try this before the season gets over. I guarantee you, kids will love it too.

How to make Guvar Dhokli Ki Sabzi?

Ingredients

  • 1 cup gram flour (besan).
  • 1/4 cup wheat flour.
  • 1 tsp white sesame seeds (safed til).
  • 1 tsp ajwain.
  • 1-1.5 tsp of asafoetida powder (hing).
  • 2.5 tsp dhaniya jeera powder.
  • 2 tsp red chilli powder.
  • 1 tsp turmeric powder (haldi).
  • Some finely chopped coriander leaves.
  • 2 tbs oil.
  • Salt as per taste.
  • Water.
  • 1 tsp cumin seeds(jeera).
  • 1 tsp mustard seeds(rai).
  • 3-4 finely chopped garlic cloves (optional).
  • 2 finely chopped tomatoes.
  • 150 gm cluster beans (guvar – chopped and rinsed).

Method

How to make?

To Make Dhokli Dough :

  • Take a mixing bowl.
  • Add 1 cup gram flour (besan)
  • Add 1/4 cup wheat flour
    Add 1 tsp white sesame seeds (safed til)
    Add 1/2 tsp ajwain
    Add a pinch of asafoetida powder (hing)
    Add 1 tsp dhaniya jeera powder
    Add 1 tsp red chilli powder
    Add 1/2 tsp turmeric powder (haldi)
    Add some finely chopped coriander leaves
    Add 1 tbs oil
    Add salt as per taste
    By adding some water knead a dough as paratha (you can also substitute water with buttermilk)
    Apply some oil & rest the dough for 10-15 min

To Cook Guvar :

Heat up the pan
Add 1 tbs oil
Add 1 tsp cumin seeds(jeera)
Add 1 tsp mustard seeds(rai)
Add 1/2 tsp ajwain
Add 1 tsp asafoetida powder (hing)
Add 3-4 finely chopped garlic cloves (optional)
Add 1.5 tsp dhaniya jeera powder
Add 1 tsp red chilli powder
Add 1/2 tsp turmeric powder (haldi)
Fry well and add 2 finely chopped tomatoes
Add salt as per taste
When tomatoes are partially cooked, add 150 gm cluster beans (guvar – chopped and rinsed)
Add 2 cup water
(add sugar as per your taste if you wish to)
Cover the lid and cook for 10-15 min

To Make Dhokli :
Now roll out few big balls from the dhokli dough
Place it on a flat surface
Flatten further with the help of rolling pin
Now cut it into small round shape dhokli (with the help of round cutter)
Now add the dhokli one by one in guvar
Cook it on medium to high flame for 7-8 min
