Excellent combination and a wonderful starter or 4 pm tea time snack, this in my books is a winning combination of health and taste.

  1. Method

    • Take a mixing bowl, add approx 2-2.5 tbs plain flour (maida)
    • Add some red chilli powder (as per taste)
    • Add salt as per taste
    • Add some water and make thick slurry
    • Then take another mixing bowl, add 3 bread crumbs
    • Add some red chilli powder (as per taste)
    • (You can also add seasonings or dry herbs)
    • Add some chopped coriander leaves and mix it well
    • Further take 7-8 crosswise cut thick zucchini slices
    • Dip them one by one into slurry and then in bread crumbs, coat it nicely.
    • (Keep it in the refrigerator for 10-15 mins)
    • Further to make tomato chutney, heat up the pan
    • Add 1/2 tsp oil
    • Add 1 tsp cumin seeds (jeera)
    • Add 1 finely chopped garlic clove (optional)
    • Add 1/2 finely chopped onion
    • Add salt as per taste
    • Add some turmeric powder (haldi) and saute until onion turns soft
    • Now add 3 blanched tomatoes and cook for 5 mins
    • (To blanch tomatoes, make 2 cuts in the base, put it into boiling water and cook until it starts releasing the skin, remove skin and chop)
    • Add 1 tsp sugar (optional), mix it and turn off the stove
    • Then add 1 tbs roasted crushed peanuts
    • Further heat up the pan to fry zucchini, pour 1-2 tsp oil
    • Place zucchini fritters on it, pour 1/2 tsp oil on each fritter
    • Cook it on medium to high flame until it turns golden-brown from both the sides
    • Take them on a serving plate, add some tomato chutney on each fritter and top with some coriander leaves
