Jowar Muthiya Recipe

I keep receiving requests for more Jowar recipes. Have already shared Jowar Dosa, Jowar Dhokla, Jowar Paratha, Jowar Appe and now Jowar Muthiya. Super healthy; very little oil; and takes very little time to make them. The texture is slightly different than regular Muthiya but it’s equally delicious. Enjoy fresh from pan hot Jowar Muthiya with cold buttermilk.

How to make Jowar Muthiya ?

Ingredients

  • 1/2 cup finely chopped carrot.
  • 1/4 cup finely chopped coriander leaves.
  • 3 finely chopped garlic cloves (optional).
  • Finely chopped small ginger knob.
  • Finely chopped green chillies (as per taste).
  • 1/2 cup finely chopped cabbage.
  • 1/2 lime juice.
  • 2 tbs roasted peanuts (sing).
  • 1/2 tsp turmeric powder (haldi).
  • 1 tsp coriander (dhaniya) powder.
  • 1 tsp cumin seeds (jeera).
  • 1/2 tsp asafoetida powder (hing).
  • 1 tsp sugar (optional).
  • 2 tbs oil.
  • 3 tbs curd (dahi/ alternatively water can be used).
  • Salt as per taste.
  • 1.5 cup sorghum flour (jowar ka atta).
  • 1/4 cup semolina (suji/ rava – for binding).
  • 1 tsp mustard seeds (rai).
  • 2 tsp sesame seeds(til).
  • 1/2 tsp Kashmiri red chilli powder
  • Some curry leaves.

Method

How to make?

  • Take a mixing bowl.
  • Add 1/2 cup finely chopped carrot.
  • Add 1/4 cup finely chopped coriander leaves.
  • Add 3 finely chopped garlic cloves (optional).
  • Add a finely chopped small ginger knob.
  • Add finely chopped green chillies (as per taste).
  • Add 1/2 cup finely chopped cabbage.
  • Add 1/2 lime juice.
  • Add 2 tbs roasted peanuts (sing).
  • Add 1/2 tsp turmeric powder (haldi).
  • Add 1 tsp coriander powder.
  • Add 1 tsp cumin seeds (jeera).
  • Add a pinch of asafoetida powder.
  • Add 1 tsp sugar (optional).
  • Add 1 tbs oil (for softness).
  • Add 3 tbs curd (dahi/ alternatively water can be used).
  • Add salt as per taste.
  • Mix everything well.
  • Now add 1.5 cup sorghum flour (jowar ka atta).
  • Add 1/4 cup semolina (suji/rava – for binding).
  • Mix it well with the help of spoon.
  • And then knead a dough.
  • Apply some oil on your palms.
  • Make cylindrical shape rolls from this mixture.
  • Take a seiver greased with oil.
  • Arrange the rolls on it.
  • Keep the seiver in 10 min pre heated steamer.
  • Cover the steamer lid with cloth.
  • Cook for 20 min on medium to high flame.
  • Turn off the flame.
  • Cut the rolls into pieces when it cools down.
  • Further for tempering heat up the pan.
  • Add 1 tbs oil.
  • Add 1 tsp mustard seeds (rai).
  • Add 2 tsp sesame seeds(til).
  • Add a pinch of asafoetida powder (hing).
  • Add 1/2 tsp Kashmiri red chilli powder.
  • Add some curry leaves.
  • Add cut muthia pieces.
  • Toss all muthiyas for 5 min.
  • Garnish with some fresh coriander.
  • Enjoy your Super Healthy & Scrumptious Jowar ke Muthiya!!!
