 Now seeing this sabzi “Karela”, you will probably skip to next video; but don’t do that. Your dislike for this sabzi comes from the fact that it’s bitter, right? But if you follow the tips and tricks as explained in video; bitterness will get minimized and you will get Gujarati style- fresh, healthy, delicious and with crunch of cashews – Kaju Karela Ki Sabzi.

How to make Kaju Karela Sabji ?


  • 400 gm Karela (Bitter Gourd).
  • 2 tbs oil.
  • 1 tsp mustard seeds (rai).
  • 1/2 tsp asafoetida powder (hing).
  • 2 tsp white sesame seeds (safed til).
  • 10-15 roughly chopped cashews.
  • 2 tsp dry coconut.
  • 1/2 tsp turmeric powder (haldi).
  • 1.5 tsp coriander (dhaniya) powder.
  • Red chilli powder (as per taste).
  • 1.5 tsp amchur powder (Alternative – lemon juice).
  • Salt to taste.
  • 1.5 tsp jaggery (gur).


How to make?

  • Take 400 gm Karela (Bitter Gourd).
  • Slightly remove skin & cut into slices.
  • Add some salt to it and mix with hands.
  • Leave for 10 min then rinse well and drain the water.
  • Now heat the pan.
  • Add 2 tbs oil.
  • Add 1 tsp mustard seeds (rai).
  • Add 1/2 tsp asafoetida powder (hing) (If you wish you can add onion & garlic at this step).
  • Add 2 tsp white sesame seeds (safed til).
  • Add 10-15 roughly chopped cashews.
  • Add 2 tsp dry coconut.
  • Fry for 5 min.
  • Then add 1/2 tsp turmeric powder (haldi).
  • Add 1.5 tsp coriander (dhaniya) powder.
  • Add red chilli powder (as per taste).
  • Add 1.5 tsp amchur powder (Alternative – lemon juice).
  • Fry for a minute, add Karela and mix it well.
  • Add salt as per taste.
  • Cover the lid and cook for 8-10 min on slow to medium flame.
  • When Karela is cooked add 1.5 tsp jaggery (gur).
  • Cook until jaggery melts.
  • Turn off the stove and take it on a serving plate.
  • Enjoy this Yummy Kaju & Karele ki Sabji warm with Chapati!
