Kurkuri Crispy Rumali Recipe

I had this few years ago in a restaurant in Ahmedabad; since then I wanted to know how they made it, but they didn’t tell me the secret. But I think I have found it on my own.

How to make Kurkuri Crispy Rumali ?


  • 1/4th cup wheat flour.
  • 1/4th cup maida
  • 1 tbs oil
  • Oil.
  • 1/2 tsp butter.
  • 1/2 garlic clove finely chopped (Optional if you are Jain).
  • Coriander leaves. 
  • Coriander stems.
  • 1/2 tsp red chilli powder.


  • Take 1/4th up wheat flour and 1/4th cup maida. .
  • Add salt.
  • Add 1 tbs oil.
  • Make soft dough.
  • Apply little oil on dough and cover for 10 minutes.
  • Roll the dough and try and make a big size Roomali Roti.
  • Try and make it thin and large roti.
  • Take a Kadai and apply little oil on it.
  • Cook roti on back of Kadai.
  • Roast till you see bubbles forming.
  • And then reverse and cook again.
  • Keep rotating and press from sides. 
  • Middle part may get a little dark or black as it gets maximum heat.
  • Roti will assume half moon shape. 
  • Let Roti cool down
  • Take a 1/2 tsp butter.
  • 1/2 garlic clove finely chopped.
  • Coriander stems.
  • Melt in microwave for 5 seconds.
  • Add 1/2 tsp red chilli powder.
  • Add salt (You can add black salt or chat masala too).
  • Serve the roti.
  • Apply the garlic butter and garnish with coriander leaves.
  • You can sprinkle onions too.
  • Crispy roomali roti is ready.
