Lemon Yogurt Bars Recipe

Very different taste and texture from regular Bars that you have. Give it a try, you are in for a lemony surprise. Especially for Summer, nothing can be better than the cold lemony texture in the mouth

How to make Lemon Yogurt Bars ?

Ingredients

• 1 cup oats
• 200 gm Hung curd
• 1/3 cup cashews(soaked in warm water)
• A big sized lemon or a small green lemon
• 1/2 tbs lemon juice(optional)
• 1 tsp vanilla essence(optional)
• 2 tbs honey(jaggery powder/chopped jaggery – optional)
• 2 tbs chopped almonds (optional)
• 1 tbs virgin coconut oil(any odourless oil/melted butter – optional)

Methods

• Heat up the pan, add 1 cup oats,
• dry roast it for 5 mins and rest it for a while to bring it to the room temperature.
• Take a mixing bowl, • add hung curd
• (put curd in a muslin cloth and hang it overnight in the refrigerator to drain water)
• Take a mixer jar, • add 1/3 cup
cashews(soaked in warm water),
• grind it and make a smooth paste.
• (You can replace cashew paste with whipped cream)
• Add cashew paste in the bowl of curd
• Add lemon zest(for amazing lime fragrance)
• Add 1/2 tbs lemon juice(optional)
• Add 1 tsp vanilla essence (optional)
• Add 2 tbs honey • (jaggery powder/chopped jaggery – optional)
• mix it and keep the mixture in refrigerator.
• Further to make base,
• take a chopper/mixer jar and add roasted oats in it.
• Add 2 tbs chopped almonds/any other nuts(optional)
• Add 3 tbs chopped seedless dates
• Add 1 tbs virgin coconut oil(any odourless
• oil/melted butter – optional) and grind it to the rugged texture.

• Further take a baking tray,
• place a parchment paper on it.
• Add oats base on it and flatten it with the help of spoon making a thick layer.
• Keep the tray in freezer for 10 mins to firm up the base.
• Now take out the mixture and tray from refrigerator.
• Pour some yoghurt mixture on base and make a thicker layer than the oats base.
• Drizzle some lemon zest(of yellow & green lemon)
• on top and keep it the freezer for 5-6 hours/overnight to get best results.
• Cut the the bar into small square shapes,
garnish with some pieces of lemon and mint leaves.
• And then your Healthy and Super Fragranceful No Bake Yoghurt Lemon Bars are ready.
