Mango Cake / Mango Chocolate Collar Cake

In this video learn how to make a beautiful Chocolate Collar surrounding a tall mango cake. You can bake this cake in oven as well as gas. I have given the links below for whipped cream and butter cream icing as well.

How to make Mango Cake | Mango Chocolate Collar Cake ?


  • 1/2 cup + 3 tbs milk with room temperature.
  • 1 tbs lime juice.
  • 1/4 cup oil (any odourless).
  • 1/2 tsp vanilla essence.
  • 1/2 cup powder sugar.
  • 3/4 cup all purpose flour.
  • 1/2 tsp baking powder.
  • 1/4 tsp baking soda.
  • Pinch of salt.
  • 1 cup whipping cream.
  • Some chopped mangoes (avoid using overripe mangoes).
  • Some water/ mango drink to drizzle on sponge.
  • Some melted dark chocolate.
  • Some pomegranates and a mint leave to garnish.


How to make?

To Make Eggless Vanilla Sponge :

  • Take a small bowl, add 1/2 cup milk with room temperature add 1 tbs lime juice.
  • Take a mixing bowl, add 1/4 cup oil (any odourless).
  • Add 1/2 tsp vanilla essence.
  • Add 3 tbs milk.
  • Add 1/2 cup powder sugar.
  • Add milk and lime mixture, mix it well with the help of hand whisker.
  • Place food strainer in it, add 3/4 cup all purpose flour.
  • Add 1/2 tsp baking powder.
  • Add 1/4 tsp baking soda.
  • Add a pinch of salt, seive and mix it well.
  • Further take a 4 inch round shape cake tin, place a butter paper on it greased with oil.
  • Pour the mixture and place cake tin in preheated oven for 10 mins at 180⁰ and bake it for 25 mins
    (To bake it on stove pre heat pan and bake it for 30-35 mins).
  • Rest the for an hour when it’s baked and then remove from the mould (insert knife from the sides, clear the sides and demould it on a plate).
  • To level the cake, slice the top off with the help of knife

To Make Cake Icing :

  • Place cake sponge on turn table, cut it from the sides first and then from the center to make even parts.
  • Keep upper part of the sponge upside down.
  • Moisten it with some water/ mango drink.
  • Spread some whipped cream on cake and make a flat layer.
    (take 1 cup whipping cream, “How to whip cream” : check this video on my page).
  • Add some chopped mangoes on it
    (avoid using overripe mangoes).
  • Again add a whipped cream layer on mango.
  • Place base of the sponge keeping downside up.
  • Drizzle some water on top.
  • Cover the sides and top of the cake well with whipped cream
    (Rest for a while)

Further to make chocolate wall, take some melted dark chocolate

  • Pour in a piping bag
    Place a butter paper on plain surface and draw a zigzag/ any design on it.
  • Stick this butter paper gently around the cake.
  • Keep cake in refrigerator for 10-15 min to set.
  • Then remove cake from refrigerator.
  • Remove butter paper slowly.
  • Make flower design on the top of the cake with the help of piping bag along with a star nozzle in it.
  • Place chopped mangoes on it
    Place some more chopped mangoes in the middle.
  • Top with some pomegranates and a mint leave
