Mango Chutney Ajwain Partha I Aam ki Launji | आम की लौंजी | Khatti Meethi Keri Ki Launji

  1. Method

    • To make paratha dough, take a mixing bowl
    • Add 1.5 cup wheat flour (gehu ka atta)
    • Add salt as per taste
    • Add approx 1.5 tsp ajwain (crushed with hands)
    • Add some finely chopped green chillies (optional)
    • Add some finely chopped coriander
    • Add approx 2 tsp oil
    • Add water (as required) and knead a soft dough
    • Apply some oil on it and rest for a while
    • Further roll out balls from the prepared dough and flatten it with the help of rolling pin and board
    • Now heat up the pan, place paratha and roast it by applying some oil/ghee
    • Cook until it turns golden-brown colour from both the sides
    • (Make more parathas with the same procedure)


    • To make mango chutney : heat up the pan
    • Add 1 tsp oil
    • Add panch phoran (consist of saunf - fennel seeds, methi - fenugreek seeds, jeera - cumin seeds, rai - mustard seeds, kalonji - black cumin)
    • Add a pinch of asafoetida powder (hing)
    • Add some turmeric (haldi) powder
    • Add 1 tsp coriander powder and mix it
    • Add approx 300 gm raw mango cut into small cubes
    • (take any raw mango as per your choice)
    • Add salt as per taste
    • Add 1/4 cup or more water (as required)
    • Cover the lid and cook for 10 min on medium flame
    • Once mango is cooked, add 1/4 cup jaggery (gur -  brown sugar/normal sugar is optional)
    • Add 2 tsp red chilli powder and mix it well
    • Cook for 2 min and turn off the stove
    • Serve this Garma Garam Tangy Mango Chutney with Healthy Ajwain ke Parathe!!!
