It’s summertime already and we always crave something chilled to eat. Today we are going to make delicious mango dessert. What comes to your mind when you think of a mango dessert? A mango icecream, mango shake, mango juice, mango kulfi but Chef Meghna is going to present a special Mango Phirni Recipe or Aam ki Phirni. It is a version of traditional firni recipe with flavors of mango pulp mixed with rice. Serve your Indian mango pudding after refrigerating, it tastes amazing when served chilled. Without any further ado, let’s get started with how to make Mango Phirni. I always am looking for ways and means to create desserts. This is my version of a no-bake dessert which is low in sweetness and is in-between the Swiss cake and Charlotte cake, especially for people who don’t have time. Ingredients

Half a liter full-fat milk
Mango pulp
1/4th cup Rice
Elaichi powder
Mango – small chopped pieces
 

Methods

Take Full-fat milk in a pan
Put the heat on
Take crushed rice so that they get cooked properly and you will get a grainy texture
Wait as the milk gets cooked along with rice
We have to let it cook till the milk gets thickened and rice gets cooked
We are making Aam ki phirni so we'll add Pulp later on
If you want to make traditional Phirni then make it with Kevda & Rose essence.
Here I am adding Elaichi powder
Milk has reduced and now time to add sugar
Always add sugar late
Sugar leaves the water so we will have to cook it for some more time
Time to transfer the thick mixture into a bowl
We need to cool it down before adding mango pulp
Mix mango pulp in the milk and rice mix
Plate Mango Phirni it in traditional clayware bowls
Clayware bowls will suck the moisture
And keep them in the fridge for a couple of hours/overnight
Garnish with small mango pieces, pistachio and cardamom powder
Serve this delicious Mango Phirni chilled.
