Masala Appam with Tangy Tomato Peanut Chutney

I just love this combination of soft jaalidaar masala appam with tangy tomato peanut chutney, I promise you, this one will win many hearts.

Making process of Masala Appam with Tangy Tomato Peanut Chutney

Ingredients

  • 1 cup semolina (suji/rava).
  • 1 tbs gram flour (besan).
  • 1-1.5 cup water (as required).
  • 1/2 cup curd (dahi).
  • Salt as per taste.
  • 2 tsp sugar (optional).
  • 3 finely chopped garlic cloves.
  • Finely chopped small ginger knob.
  • 4 finely chopped tomatoes.
  • Red chilli powder (as per taste).
  • 1/4 cup crushed roasted peanuts.
  • Some veggies (finely chopped coriander, onion and green chillies).
  • 1 small packet fruit salt (Eno).

Method

How to make?

  • Take a mixer jar, add 1 cup semolina (suji/rava).
  • Add 1 tbs gram flour (besan – can substitute with leftover rice).
  • Add 1/2 cup water.
  • Add 1/2 cup curd (dahi).
  • Add salt as per taste and grind to a smooth texture
    (add more 1/2 cup water if batter is too thick).
  • Add 1 tsp sugar (optional) and again grind it.
  • Transfer batter in a bowl.
  • Add 1/4 cup more water to bring it to pouring consistency.

Along with this, heat up the pan to make tomato chutney :

  • Pour some oil.
  • Add 3 finely chopped garlic cloves.
  • Add a finely chopped small ginger knob.
  • Add 4 finely chopped tomatoes.
  • Add red chilli powder (as per taste).
  • Add salt as per taste and mix it.
  • Cover the lid and cook for 5-7 min.
  • When tomatoes are cooked, add 1 tsp sugar (to balance sourness).
  • Add 1/4 cup crushed roasted peanuts.
  • Mix it well & turn off the stove.
  • Further add some veggies in batter and mix it.
    (finely chopped coriander, onion and green chillies).
  • Heat up the pan.
  • Add 1 small packet fruit salt in batter (Eno for quick fermentation).
  • Start making appam immediately (after adding Eno).
  • Add some oil in the pan and wipe it with a tissue.
  • Pour batter in pan and spread it (make any size appan you wish to).
  • Cook it on slow to medium flame for 5 min.
  • You will see bubbles on appam after a while.
  • Cook until it turns dry from top and golden-brown from the base.
