No Fry Crispy Kothimbir Vadi

    No Fry Crispy Kothimbir Vadi

    And this is my version of Kothimbir Vadi – not deep fried but shallow fried and still crispy.

    Ingredients

    • 1 cup gram flour (besan).
    • 2 tbs roasted crushed peanuts.
    • A Pinch of asafoetida powder (hing – optional)
    • 1/2 tsp turmeric powder.
    • Some grated ginger and garlic (optional)
    • 3-4 finely chopped green chillies (red chilli powder – optional).
    • 1/2 lemon juice.
    • 1 cup water.
    • Salt as per taste.
    • 1 cup finely. chopped coriander
    • 1/2 tsp garam masala.
    • Oil.
    • 1 tsp mustard seeds (and ajwain – optional).

    Methods

    • Take a mixing bowl add 1 cup gram flour (besan)
    • Add 2 tbs roasted crushed peanuts
    • Add a pinch of asafoetida powder (hing – optional)
    • Add 1/2 tsp turmeric powder
    • Add some grated ginger and garlic (optional)
    • Add 3-4 finely chopped green chillies (red chilli powder – optional)
    • Add 1/2 lemon juice
    • Add 1 cup water
      (slowly and keep stirring to avoid having lumps
      – add some more water if batter is very thick).
    • Add salt as per taste.
    • Add 1 cup finely chopped coriander.
    • Add 1/2 tsp garam masala.
    • Now heat up the pan, pour 2 tsp oil and 1 tsp mustard seeds (and ajwain – optional).
    • Pour the batter in the pan, keep stirring to avoid lumps and cook it on medium flame for 7-8 mins.
    • Turn of the stove and place the mixture in a tray/ plate and flatten it by making a thick layer.
    • Rest it for a while and then cut it into small square pieces.
    • Heat up the pan,
      add 1 tbs oil and spread some white sesame seeds (til) on it.
    • Place all pieces on the pan, turn as soon as the colour changes to golden.(from both the sides).
    • And then your Garma Garam Kurkurit Kothimbir Vadi is ready.
    • Serve it with green coriander chutney.
