No Fry Crispy Kothimbir Vadi

And this is my version of Kothimbir Vadi – not deep fried but shallow fried and still crispy.

Ingredients

1 cup gram flour(besan)
2 tbs roasted crushed peanuts
A Pinch of asafoetida powder(hing – optional)
1/2 tsp turmeric powder
Some grated ginger and garlic(optional)
3-4 finely chopped green chillies (red chilli powder – optional)
1/2 lemon juice
1 cup water
Salt as per taste
1 cup finely chopped coriander
1/2 tsp garam masala
Oil
1 tsp mustard seeds(and ajwain – optional)

Methods

Take a mixing bowl add 1 cup gram flour(besan)
Add 2 tbs roasted crushed peanuts
Add a pinch of asafoetida powder(hing – optional)
Add 1/2 tsp turmeric powder
Add some grated ginger and garlic(optional)
Add 3-4 finely chopped green chillies(red chilli powder – optional)
Add 1/2 lemon juice
Add 1 cup water
(slowly and keep stirring to avoid having lumps
– add some more water if batter is very thick)
Add salt as per taste
Add 1 cup finely chopped coriander
Add 1/2 tsp garam masala
Now heat up the pan,
pour 2 tsp oil and 1 tsp mustard seeds
(and ajwain – optional)
Pour the batter in the pan,
keep stirring to avoid lumps
and cook it on medium flame for 7-8 mins.
Turn of the stove and
place the mixture in a tray/plate and
flatten it by making a thick layer.
Rest it for a while and then cut it into small square pieces.
Heat up the pan,
add 1 tbs oil and spread some white sesame seeds(til) on it.
Place all pieces on the pan,
turn as soon as the colour changes to golden.(from both the sides)
And then your Garma Garam Kurkurit Kothimbir Vadi is ready.
Serve it with green coriander chutney. .
