No Fry Stuffed Tomato Rings

What is Monsoon without Pakoda.. This popular recipe of Fried Tomato Pakoda, inspired me to created No Fry Stuffed Tomato Rings. Make sure you have taken not too ripe; and rest the recipe will do it’s magic.

How to make No Fry Stuffed Tomato Rings?

Ingredients

  • 1/2 bowl gram flour (besan).
  • 2 tbs rice flour (for crisp).
  • Salt as per taste.
  • 1 tsp red chilli powder (as per taste).
  • 1 tsp turmeric powder (haldi).
  • 1/2 tsp ajwain.
  • 2 pinch asafoetida powder (hing).
  • Water (as required).
  • 2 tbs + 1/2 tsp oil.
  • 1/2 tsp cumin seeds (jeera).
  • 1/2 tsp mustard seeds (rai).
  • 1 finely chopped garlic clove.
  • Some finely chopped ginger.
  • 2 finely chopped green chillies.
  • 2 medium sized chopped boiled potatoes.
  • Finely chopped coriander leaves.
  • Tomato slices (remove seeds – do not take overripe tomatoes).

Method

How to make?

  • Take a mixing bowl.
  • Add 1/2 bowl gram flour (besan).
  • Add 2 tbs rice flour (for crisp).
  • Add salt as per taste.
  • Add 1 tsp red chilli powder (as per taste).
  • Add 1/2 tsp turmeric powder (haldi).
  • Add 1/2 tsp ajwain.
  • Add a pinch of asafoetida powder (hing).
  • Add water gradually and make thick batter (as ribbon consistency).

Leave for a while
To Make Aloo Stuffing :-

  • Heat up the pan, pour some oil.
  • Add 1/2 tsp cumin seeds (jeera).
  • Add 1/2 tsp mustard seeds (rai).
  • Add a pinch of asafoetida powder (hing).
  • Add some turmeric powder (haldi).
  • Add 1 finely chopped garlic clove.
  • Add some finely chopped ginger.
  • Add 2 finely chopped green chillies.
  • Add salt as per taste.
  • Add 2 medium sized chopped boiled potatoes.
  • Mix it well and add chopped coriander leaves.
  • Turn off the heat and transfer stuffing in a bowl.
  • Further take tomato slices (remove seeds – do not take overripe tomatoes).
  • Fill this stuffing in tomato slices.
  • Further heat up the pan to shallow fry tomato rings.
  • Pour 2 tbs oil.
  • Dip rings delicately in besan batter one by one.
  • Place them on pan.
  • Apply some batter on top of each tomato ring.
  • Fry it on medium heat until both the sides turn golden-brown.
  • Remove excess besan from the rings.
  • Take them on a serving plate.
  • Garnish with some Green Chutney & Coriander leaves.
