Palak Paratha Recipe with Aloo Ki Sabzi

How to make Palak Paratha and Aloo Ki sabji?

Ingredients

  • A bunch of Spinach (Add Palak in hot water, remove in 5 seconds & transfer in a bowl of Ice Water to cool down)
  • 1 chopped Green Chilli
  • 2 finely chopped small Ginger Knobs
  • 1 Garlic Clove
  • Handful of chopped Coriander Leaves
  • 1 Lemon Juice
  • 1 cup Wheat Flour (Gehu ka Atta)
  • Salt as per taste
  • 1/2 tsp Ajwain
  • 1/2 tsp White Sesame Seeds (Safed Til)
  • 1 tsp Oil + more Oil for Sabji & to roast paratha
  • Water (as required)
  • 1 tsp Cumin Seeds (Jeera)
  • 1 tsp Mustard Seeds (Rai)
  • Pinch of Asafoetida Powder (Hing)
  • Few Curry Leaves
  • Red Chilli Powder (as per taste)
  • Pinch of Turmeric Powder (Haldi)
  • 1 tsp Coriander (Dhaniya) Powder
  • 1 medium sized finely chopped Tomato
  • 3 medium sized boiled Potatoes, cut into pieces.

Method

How to make?

To Make Palak Puree:

  • In a mixer jar, take 1 chopped Green Chilli
  • Add 1 finely chopped small Ginger Knob
  • Add 1 Garlic Clove
  • Add handful of chopped Coriander Leaves
  • Add 1 Lemon Juice
  • Add slightly blanched Palak
  • Churn to make puree

To Knead Dough:

  • Take 1 cup Wheat Flour (Gehu ka Atta)
  • Add Salt as per taste
  • Add Ajwain
  • Add White Sesame Seeds (Safed Til)
  • Add 1 tsp Oil
  • Add Palak Puree
  • Add a little Water (if required) and knead a soft dough
  • Apply some Oil and rest the dough

To Make Aloo ki Sabji:

  • Heat Oil in a pan
  • Add 1 tsp Cumin Seeds (Jeera)
  • Add 1 tsp Mustard Seeds (Rai)
  • Add a pinch of Asafoetida Powder (Hing)
  • Add few Curry Leaves
  • Add 1 finely chopped small Ginger Knob
  • Add Red Chilli Powder (as per taste)
  • Add a pinch of Turmeric Powder (Haldi)
  • Add 1 tsp Coriander (Dhaniya) Powder
  • Fry everything well
  • Add Salt as per taste
  • Add 1 medium sized finely chopped Tomato
  • Add some Water (to avoid burning spices)
  • Add 3 medium sized boiled Potatoes, cut into pieces
  • Add Water (if required) cover lid and cook for 5 min
  • Roll out few balls from the dough prepared
  • Take a dough ball on rolling board
  • Dust some Dry Flour on it
  • Flatten with the help of rolling pin
  • Drizzle some Oil and Dry Flour on flattened dough
  • Make 2 folds of it and roll further to give triangular shape
  • Now heat the pan and place paratha on it
  • Drizzle some Oil and roast the paratha well from both sides until golden-brown
    (Make more parathas with the same procedure)
  • Serve Palak Paratha & Aloo Sabji with some freshly chopped coriander on it
