Paneer Tikka Masala

    Ingredients

    • 1/2 cup curd – for paneer tikka
    • 2 tbs curd – for tikka masala gravy
    • 2 tsp dry roasted gram flour(besan)
    • 2.5 tsp Kashmiri red chilli powder
    • 2 tsp tikka masala/(garam masala – optional)
    • 1 tsp roasted cumin seeds(jeera) powder
    • 2 pinch of turmeric powder
    • Salt as per taste
    • Some kasuri methi • 4-5 tsp oil(including frying)
    • Some finely chopped green chillies(as per taste)
    • 3 tsp ginger garlic paste
    • Chopped vegetables
    (capsicum, onion, tomatoes)
    • 200 gm paneer(cut into cubes)
    • 1 finely chopped onion
    • 1 tsp coriander powder
    • 2 finely chopped tomatoes

    Methods

    • To Make Paneer Tikka :
    • Take a mixing bowl,
    • add 1/2 cup curd(dahi)
    • Add 2 tsp dry roasted gram flour(besan – for binding)
    • Add 1 tsp Kashmiri red chilli powder (for red colour)
    • Add 1 tsp tikka masala/(garam masala – optional)
    • Add 1/2 tsp roasted cumin seeds(jeera) powder
    • Add a pinch of turmeric powder
    • Add salt as per taste
    • Add some kasuri methi(rub with palms)
    • Add 2 tsp oil/(you can add mustard oil)
    • Add some finely chopped green chillies (as per taste)
    • Add 1 tsp ginger garlic paste and mix it well.
    • Add some chopped vegetables (capsicum, onion, tomatoes)
    • Add 200 gm paneer(cut into cubes)
    • Mix until the paneer pieces and veggies are well coated, rest the marination for half an hour.
    • Further take some bamboo skewers(soaked in water for an hour)
    • Insert a piece of chopped onion, capsicum, tomato and paneer on the skewer/stick
    and repeat the process making 3-4 more tikka sticks.
    • (Keep the remaining marination to add in tikka masala gravy)
    • Now heat up the grill pan/any non stick pan,
    • pour 1-2 tsp oil and spread it over the pan.
    • Place all tikkas on it and roast it until it gets golden-brown colour.
    • To Make Paneer Tikka Masala(Gravy) :
    • Heat up the pan, add 1 tbs oil/butter in it.
    • Add 2 tsp ginger garlic paste
    • Add 3-4 finely chopped green chillies
    • Add 1 finely chopped onion
    • Add salt as per taste and saute onion,
    • until it is brown all over.
    • Add 1 tsp coriander powder
    • Add 1/2 tsp roasted cumin seeds(jeera) powder
    • Add some turmeric powder 1 tsp tikka masala/(garam masala – optional)
    • Add 1.5 tsp Kashmiri red chilli powder(as per taste)
    • Mix it well and add 2 finely chopped tomatoes.
    • Add a spoonful of water and keep mixing it to avoid burning.
    • Cook it on medium flame for 5-7 mins.
    • Further add remaining marination and stir it well.
    • Add 2 tbs curd(dahi)
    • Add 1 tbs water and mix it well
    • Add some kasuri methi from top and paneer tikka in this gravy and turn off the stove.
    • Take tikka masala in a serving plate, put a tikka stick on it.
    • To make tikka masala smokey – heat up the coal,
    • keep it in a small bowl and keep this bowl on tikka masala gravy.
    • Cover it with a lid, leave for 5 mins and garnish with a coriander stem on top.
