Heat up a pan.
Add 2 tbs oil
Since we have to mildly fry potatoes, oil is slightly more than how much you put in regular sabjee
We want potatoes to become golden brown
Once the oil is heated up, cook potatoes till they become golden brown
Take them on side
Now in the leftover oil, add ginger-garlic paste and asafoetida (hing)
Let the paste and hing get cooked for a while
Now add 2 finely chopped green chilies
Add 1/2 tsp Haldi powder
Add 1.1/2 tsp dhaniya powder
Let masalas get cooked as they will give a nice aroma to aloo methi sabjee
Add some salt
TIP: If you find methi leaves bitter, then while washing methi in the beginning, you could wash in salted water to take away its bitterness
Let methi get cooked for 4-5 minutes
Now add the fried potatoes and mix well
Cover the lead and let it cook for 5 minutes, no extra water needed
Your Aloo Methi Recipe is ready
Switch off the flame, garnish with Kasuri methi
