How to make Punjabi Aloo Methi Recipe?

Ingredients

  • 2 Boiled Potatoes.
  • 2 tbs oil.
  • 2 Cup Methi (Fenugreek leaves).
  • 2 Garlic cloves.
  • 2 Fresh chilies
    Asafoetida (hing powder).
  • 1/2 tsp Turmeric powder (haldi powder).
  • 1.1/2 tsp Coriander powder (dhaniya powder).
  • Salt.
  • 1 tsp Ginger garlic paste.
  • Kasuri Methi (for garnishing) – optional.

Methods

  • Heat up a pan.
  • Add 2 tbs oil
  • Since we have to mildly fry potatoes, oil is slightly more than how much you put in regular sabjee.
  • We want potatoes to become golden brown.
  • Once the oil is heated up, cook potatoes till they become golden brown.
  • Take them on side
  • Now in the leftover oil, add ginger-garlic paste and asafoetida (hing).
  • Let the paste and hing get cooked for a while.
  • Now add 2 finely chopped green chilies.
  • Add 1/2 tsp Haldi powder.
  • Add 1.1/2 tsp dhaniya powder
  • Let masalas get cooked as they will give a nice aroma to aloo methi sabjee.
  • Add some salt

TIP: If you find methi leaves bitter, then while washing methi in the beginning, you could wash in salted water to take away its bitterness.

  • Let methi get cooked for 4-5 minutes.
  • Now add the fried potatoes and mix well.
  • Cover the lead and let it cook for 5 minutes, no extra water needed.
  • Your Aloo Methi.
  • Recipe is ready.
  • Switch off the flame, garnish with Kasuri methi.
  • Enjoy Aloo Methi Roti, Puri or Paratha.
