Ingredients

  • 5-6 boiled eggs
    Oil.
  • Turmeric Powder
  • Kashmiri Red Chili Powder.
  • 2 Green Chilies.
  • Garam Masala
  • 1-2 tomatoes shredded, crushed.
  • 1 big Chopped onion.
  • Few garlic cloves finely chopped.
  • Salt per taste.
  • Kasuri Methi (Fenugreek Leaves).

Methods

  • Heat up a pan.
  • Add 2 spoon oil.
  • Let it warm up, we need to fry eggs.
  • Take 5-6 boiled eggs.
  • Prick eggs with fork so that when we fry eggs, the masala goes inside the eggs.
  • Now add a tsp of Turmeric powder and Kashmiri Red Chili Powder.
  • Now place eggs in the pan and let them get coated with masala and get mildly fried.
  • Now take out the eggs.
  • Now in the same pan, add chopped garlic cloves.
  • Garlic will start getting cooked immediately as oil is already hot.
  • Now add chopped onion.
  • Add tomato shredded and crushed.
  • Add 2 chopped chilies.
  • Add salt per taste.
  • Cover and cook for 5–10 minutes, till you see oil is released from the masalas and coming to the rim.
  • Now add1 tsp Garam Masala, 1/2 tsp Turmeric Powder and 1 tsp Red Chili powder.
  • Cook a little.
  • Add some water and let it get cooked till you get one boil.
  • Add some fresh cream it will help reduce tomato tartness.
  • Time to add fried eggs.
  • Add some Kasuri methi (fenugreek leaves) crushed.
  • And some coriander leaves.
  • Mix well. Cover the lead and let it cook for 5 minutes.
  • Your Punjabi Egg Curry Recipe is ready, take it out in a serving bowl.
