Rajasthani Bajre Ki Khichdi

Rajasthani bajre ki Khichdi is a popular winter special dish made with Bajra or pearl millet and yellow daal (moong daal). Bajra is is a staple food of Gujarat and Rajasthan. This Khichdi is cooked in the winter season as Bajra is known for generating heat in the body. The procedure of making bajra khichdi is quite easy and quick. This Rajasthani Bajre ki khichdi is a one-pot dish, you don't need any fancy ingredients and equipment. There are many recipes to make with bajra from Bajra roti or parantha to vada to rice but bajra ki khichdi is one of the most popular ones.

Ingredients

1 cup half-cooked millet (Bajra)
1 cup pre-soaked yellow dal (Moong dal)
2 tbs Ghee
1 tsp Jeera (Cumin Seeds)
1/2 tsp asafoetida (hing)
3-4 cloves of finely chopped garlic
2 finely chopped green chilies
1 finely chopped onion
salt per taste
Mix vegetables chopped- Cauliflower, Green Peas, Carrots
1 tsp Turmeric Powder (Haldi)
1.5 tsp  Kashmiri Red Chili Powder
1/2 tsp Garam Masala
Water
Coriander leaves (Dhaniya)

Method

Heat up the pressure cooker
Add 2 tbs Ghee
Add 1 tsp Jeera (Cumin Seeds)
Wait for Jeera to crackle
Add 1/2 tsp Hing (Asafoetida)
Add 3-4 cloves of finely chopped garlic
Add 2 finely chopped green chillies
Mix well
Now add 1 small finely chopped onion
Add salt
Add chopped vegetables: Cauliflower, Green Peas & Carrots
Add 1 tsp Haldi (Turmeric Powder)
Add 1.1/2 tsp Kashmiri Red Chili Powder
Add 1/2 tsp Garam Masala
Mix well
Add 1 cup half-cooked millet (Bajra) ready
Add 1 cup pre-soaked yellow dal (Moong dal)
Add 1.1/2 cup water
Mix well
Add coriander leaves
Close the pressure - cooker and wait for 3 whistles
After 3 whistles open the cooker
Mix again
Plate and garnish with Coriander leaves
Enjoy with curd and pickle
