    How to make Surti Sev Khamani?

    Ingredients

    • 2 cup gram flour (besan).
    • Salt as per taste.
    • 1 tbs sugar.
    • 2 tsp crushed ginger garlic.
    • Finely chopped green chillies (as per taste).
    • 1 lime juice.
    • 1 tbs oil + 1/4 cup oil.
    • 2 cup water.
    • 1 tsp fruit salt (Eno).
    • 1 tsp black mustard seeds (rai).
    • 1 tsp white sesame seeds (safed til).
    • Some curry leaves.
    • Pinch of asafoetida powder.
    • 1/2 tsp turmeric powder (haldi).
    • Some pomegranate.
    • Some finely chopped coriander leaves.
    • Sev.

    Method

    How to make?

    • Take a mixing bowl, add 2 cup gram flour (besan).
    • Add salt as per taste.
    • Add 1 tbs sugar.
    • Add 2 tsp crushed ginger garlic.
    • Add finely chopped green chillies (as per taste).
    • Add 1/2 lime juice.
    • Add 1 tbs oil and mix it well.
    • Add approx 1.5 cup water gradually and make thick batter (as dosa consistency).
    • Now turn on the stove and place steamer on it.
    • Add 1 tsp fruit salt (Eno) and mix it well.
    • Pour this batter in a big plate greased with oil.
    • Place it in the steamer, cover the lid and cook it for 20 mins on high flame (After 20 mins check if dhokla is cooked by inserting a pin/ knife in it, if it comes out clean it is cooked).
    • Rest it until cools down.
    • Release the sides and demould in a plate.
    • Crush this dhokla with the help of spoon/hand and make khamani.
    • Further heat up the pan, pour 1/4 cup oil.
    • Add 1 tsp black mustard seeds (rai).
    • Add 1 tsp white sesame seeds (safed til).
    • Add some chopped green chilli.
    • Add some curry leaves.
    • Add a pinch of asafoetida powder.
    • Add 1/2 tsp turmeric powder (haldi) and mix it well.
    • Add salt as per taste.
    • Add 1/2 cup water.
    • Add 1/2 lime juice.
    • Once it starts boiling add khamani and mix it gently.
    • Add some finely chopped coriander leaves.
    • Add some pomegranate.
    • Add some sev and again mix it.
    • Take it on a serving plate, top with some pomegranate, chopped coriander leaves and sev.
    • Here’s your Chatpati, Yummilicious Sev Khamani ready!!!
