2 eggs
Salt per taste
Crushed black pepper
Shredded paneer
Finely chopped Onion
Finely chopped Green Chillies
Finely chopped colorful bell peppers
Chopped Coriander
Cream cheese
Tomato Ketchup and Potato Wedges for plating

First, we make the omelet mixture.
Break 2 eggs in a bowl
#Tip: By adding a spoon of water, you will make Omelette really fluffy.
Add some salt per taste
Add crushed black pepper
Beat eggs well
Let's prepare the stuffing
In another bowl, take shredded paneer, add finely chopped onions, chopped green chillies and chopped bell peppers
Add some chopped coriander
Add some cream cheese, it will ensure stuffing gets a nice binding
Some salt - go easy on the salt as Cheese is already salty
Mix the stuffing well
Heat up a pan to make an omelet, pour some oil
Pour omelette mix in the pan, let it cook a little till it gets semi-set (half cooked)
Now add the stuffing at the center of the omelet
Gently roll the omelette
Let it cook for 2 minutes more so that the stuffing gets melted nicely
So our stuffed omelette is ready, serve it with potato wedges, tomato ketchup and coriander on top.
