How to make Suji Sandwich Dhokla | सूजी सैंडविच ढोकला

Ingredients

Recipe's Secret

  • 1 cup suji / Rava / semolina.
  • A small piece of ginger crushed.
  • 3 green chillies crushed.
  • Salt per taste.
  • 1/2 cup curd (Dahi).
  • 1/4th cup water. 
  • 1/4th cup water again.
  • Cover the lead and let it rest for 15-20 min.
  • Grease cupcake moulds with oil.
  • 1 tsp fruit salt.
  • 2 tbsp water
    If don’t have fruit salt, use 1/2 tsp baking soda.
  • Take out 2-3 tbsp batter in another bowl.
  • 1-1.5 tbs mint coriander chutney.
  • Fill the bottom layer of white dhokla mixture with 1 spoon in each mould.
  • Keep it for steaming for 5-7 minutes.
  • Fill next layer of green dhokla mixture.
  • And steam again for 5 minutes.
  • Now the top layer again with white dhokla mixture.
  • And steam 7-8 minutes.
  • Prepare tadka to drizzle on dhokla.
  • 2 tsp oil.
  • 1 tsp mustard seeds.
  • A pinch of asafoetida.
  • Few green curry leaves.

Method

How to make?

  • In a bowl take 1 cup semolina.
  • Add a crushed small piece of ginger and 3 green chillies.
  • Add some salt per taste.
  • Add 1/2 cup curd.
  • Add 1/4th cup water and mix.
  • Again add another 1/4th cup water.
  • Mix well.
  • Cover the lead and let it rest for 15-20 min.
  • Meanwhile, switch on the steamer.
  • Grease cupcake mould or small bowls or aluminium moulds with oil.
  • Now check the batter after 15 min.
  • Add 1 tsp fruit salt and mix.
  • Add 2 tbsp water; mix immediately as you see bubbles.
  • If you don’t have fruit salt /Eno, you can add 1/2 tsp baking soda.
  • Take out 2-3 spoon of batter in another bowl and add 1-1.5 tbs mint coriander chutney.

  • Fill the bottom layer of white dhokla mixture with 1 spoon in each mould.
  • Keep it for steaming for 5-7 minutes.
  • Fill next layer of green dhokla mixture. 
  • And steam again for 5 minutes.
  • Now the top layer again with white dhokla mixture.
  • And steam 7-8 minutes.
  • Prepare tadka to drizzle on dhokla.
  • In a pan take 2 tsp oil.
  • Once the oil heats up add 1 tsp rai ke daane (mustard seeds).
  • Add a pinch of asafoetida.
  • Add few green curry leaves.
  • Dhokla once ready, take out of the cupcake mould.
  • Drizzle tadka on top
    Garnish with green chutney and coriander leaves.
