Sweet corn soup

So here is our classic sweetcorn vegetarian soup. If you are a fan of this soup, then try this method and let me know how was the experience. I personally love adding lots of vegetables into soup and at the same time keeping them crunchy / not overcooking them.Enjoy.

  • 1.5 cups Sweet Corn (boiled)
  • 1/2 teaspoon Butter
  • 2 cloves finely chopped Garlic
  • 1 small piece of finely chopped Ginger
  • Chopped Spring Onion (white part)
  • 1/4 cup finely chopped French Beans
  • 1/4 cup finely chopped Carrot
  • Salt as per taste
  • Crushed Black Pepper
  • 2.5 Water
  • Some chopped Red Bell Peppers
  • 2 teaspoons Corn Flour to be diluted with Water
  • Chopped Spring Onion (green part)
  • Vinegar & chopped Chillies to serve
  1. Method
    • Pressure cook 1.5 cup Sweet Corn up to 1 whistle
    • Churn 1 cup boiled Sweet Corn in mixie and keep aside
    • Heat 1/2 tsp Butter/Oil in a pan
    • Add 2 finely chopped Garlic cloves 
    • Add a small piece of finely chopped Ginger
    • Saute and add Spring Onion (white part)
    • Add 1/4 cup finely chopped French Beans
    • Add 1/4 cup finely chopped Carrot
    • (use veggies as per your choice)
    • Add Salt as per taste
    • Add crushed Black Pepper
    • Add Sweet Corn paste
    • Add 2.5 cup Water
    • Stir and wait until a boil
    • Then add 1/2 cup boiled Sweet Corn
    • Add some chopped Red Bell Peppers
    • Dilute 2 tsp Corn Flour with Water
    • Add it into soup and keep stirring
    • Cook until a boil
    • Turn off the heat and add some Spring Onion in the end
    • Serve warm with Chilli Vinegar drizzled on top
