Tam Tam Khaman Recipe

Make Tam Tam Khaman

Very famous street food from Gujarat – spicy Tam Tam Khaman.


  • 1.5 cup gram flour (besan).
    2 tbs semolina (suji/ rava).
  • Some finely chopped green chillies. 
  • A small piece of ginger (shredded).
  • A pinch of asafoetida powder.
  • A pinch of turmeric powder.
  • Salt as per taste.
  • 2 tsp sugar.
  • 3 tbs sour curd.
  • 3/4 to 1 cup water.
  • 1 tsp fruit salt (Eno)
  • 2 tbs oil.
  • 2 tbs mustard seeds (rai – optional).
  • Some curry leaves
  • A pinch of asafoetida powder
  • 1/2 tsp turmeric powder.
  • 1.5 tsp Kashmiri red chilli powder.
  • A pinch of garam masala.
  • 1 tbs water
  • Some finely chopped coriander.
  • Some mint leaves
    2 green chillies.
  • Some coriander leaves with stems.
  • 1/2 lime juice.
  • 2 ice cubes.
  • 1/2 spoon of water.


  • Take a mixing bowl, add 1.5 cup gram flour (besan).
  • 2 tbs semolina (suji/ rava).
  • Add some finely chopped green chillies. 
  • Add a small piece of ginger (shredded).
  • Add a pinch of asafoetida powder.
  • Add a pinch of turmeric powder.
  • Add salt as per taste.
  • Add 1 tsp sugar.
  • Add 3 tbs sour curd
    (you can add 2-3 drops lime juice
    if curd is less sour) mix it well.
  • Add 3/4 to 1 cup of water step by step to avoid clumps,
    keep stirring the batter well for 5-7 mins and make thicker batter consistency
    (as dosa batter) and get good aeration.
    (You can add 2 tbs oil to make it softer – optional).
  • Further heat up the steamer, bring some water and place a stand on it and leave for boiling.
  • Add 1 tsp fruit salt (Eno for fluffiness) in the batter and again mix it well.
  • Take a plate greased with oil and pour thick batter in it and quickly place it in the steamer once water starts boiling.
  • Cover the steamer lid with cloth
    (prevents water running on dhokla) and cook it for 15-20 mins. (Now put a knife inside dhokla, if the knife comes out clean then it is properly cooked).
  • Turn of the flame, take out of the steamer and rest it for 5 mins.
  • Cut the dhokla into square shape pieces.
  • Further for tempering, heat up the pan and add 2 tbs oil.
  • Add 2 tbs mustard seeds (rai – optional).
  • Add some curry leaves
  • Add a pinch of asafoetida powder
  • Add 1/2 tsp turmeric powder.
  • Add 1.5 tsp Kashmiri red chilli powder.
  • Add a pinch of garam masala.
  • Add salt as per taste. 
  • Add 1 tbs water
    (to avoid burning) and mix it on slow flame.
  • Now add all pieces of khaman dhokla in the pan and
    mix it lightly with a help of spoon.
  • Add some finely chopped coriander on it.

To make chutney :-

  • Take a mixer jar, add some mint leaves.
  • Add some coriander leaves with stems.
  • Add 2 green chillies
  • Add some salt
  • Add 1/2 lime juice (to avoid darkness).
  • Add 2 ice cubes (to avoid darkness).
  • Add 1 tsp sugar
  • Add 2-3 pieces of plain/ masala khaman. 
    dhokla (for thickness).
  • Add 1/2 spoon of water and grind it well.

Serve your Yummilicious, Spicy Tam Tam Khaman with Tangy Green Chutney to taste Amazing!!!
