Tuscan Vegetable Soup Recipe


  • ½ litre veg. stock
  • ½ tin bake beans
  • 1 stick celery (finely chopped).
  • 10 basil leaves
  • 1/2 cup chopped carrots.
  • ½ cup chopped onion.
  • 2 tbsp Sugar.
  • 2 tbsp tomato ketchup.
  • 2 cloves garlic.
  • 2 tbsp chopped bell peppers.
  • ½ cup zucchini cut in to cubes.
  • cheese for garnish
  • Salt per taste.
  • Black Pepper per taste.


  • Heat the oil in a sautee pan.
  • Add onions, celery and garlic with some salt.
  • Add the carrots to the pan and cook it till it becomes tender.
  • Add all the vegetables along with the baked beans, tomato ketchup and mix it well by adding the vegetable stock to pan.
  • Cook the soup till it boils, add some black pepper and garnish the soup with some cheese and a few basil leaves.
