Ingredients

Blanched Spinach (Palak) - How to blanch Palak, you can see in Palak Paneer Recipe of mine
1 tsp Jeera (Cumin Seeds)
1 tsp Ginger Garlic Paste (adrak lasun ki paste)
1 chopped onion
A cup of fresh green peas (matar)
Some chopped french beans (faras beans)
Salt
Chopped green chillies
1/2 tsp Turmeric Powder
Garam Masala
Amchur powder
Chopped capsicum
Pudina ka patte (Mint Leaves)
Coriander leaves (Dhaniya)
Boiled potatoes
Grated paneer
1 cup already dry roasted besan (chickpeas powder)
bread crumbs

Method

Favorite starter for vegetarians whenever we go to restaurants, we order Hara Bhara Kabab.. the problem is that in restaurants they always fry Hara Bhara Kabab, but here I have altered the recipe and gone for shallow-frying. I strongly recommend this change; to avoid that extra oil.

Method:
Heat up a pan
Keep Blanched Palak ready, you can see in my other recipe video of Palak Paneer how Palak is blanched
Add some oil into the pan
Add 1 tsp Jeera (Cumin Seeds)
Cook Jeera till it gets brown
Add 1 tsp ginger garlic paste
Add chopped onions
Let it cook
Add fresh green peas (hare matar)
Add chopped French beans
Add salt per taste
Add chopped green chillies
Mix well
Add 1/2 tsp Turmeric powder
Add Garam Masala
Add Amchur powder
Cook all vegetables till they are half cooked only because when we will make Tikki these will again get cooked; so don't make it too mushy.
Add chopped capsicums
Now switch off the flame
and let the mixture cool down
Take out the mixture in a bowl for 5-10 minutes
Add few mint leaves & coriander leaves into this mixture
And add blanched Palak (blanched spinach) at this stage
Now crush this entire mix in a mixie, but don't make a paste; leave it half crushed
Add boiled potatoes
Add some grated paneer into this mix for a nice texture
Add a spoon of bread crumbs
Mix everything well
Now apply some oil on your hands and make small roundels & press them to make Tikki shape
Roll Tikki in bread crumbs
Place cashew on top and now shallow fry kababs ton both sides
Serve Hara Bhara Kabab with Green Pudina Chutney
