Ingredients

  • 1 cup Boiled Quinoa.
  • 2 cups Water.
  • 1/2 cup chickpeas (Kabuli chana).
  • Green onion chopped.
  • Tomatoes (optional).
  • Coriander leaves
  • Mint leaves.
  • Pomegranate.
  • Grilled chicken (optional).

For the salad dressing :

  • 1 tbs Olive oil.
  • 1 tbs Balsamic vinegar.
  • 2 tbs Honey.

Methods

  • Take Boiled Quinoa.
  • Measurement for boiling: 1 cup Quinoa and 2 cup Water.
  • Let it boil like you boil rice.
  • Add 1/2 cup boiled chickpeas.
  • Mix well.
  • Add chopped green onion.
  • You can add tomatoes (optional).
  • Add lots of coriander leaves.
  • Add few mint leaves for that extra freshness.
  • Add pomegranate.
  • Non-vegetarians can add grilled chicken.
  • As such Quinoa and Chickpeas make this a high protein meal.
  • Mix well.
  • Let’s make salad dressing.
  • Take 1 tbs olive oil.
  • Add 1 tbs balsamic vinegar.
  • Add 2 tbs honey
  • Mix it well.
  • Dressing is ready.
  • Time to add Salad dressing into Salad.
  • Serve the salad & garnish with mint leaves.
