  1. Method

    • Heat up the pan
    • Add 1 spoon Extra Virgin Coconut Oil
    • Add 2 chopped Garlic Cloves
    • Add 1 medium chopped Onion
    • Add Salt as per taste
    • Add crushed Black Pepper
    • Saute until onion is slightly soft
    • Add 1/2 cup chopped Pumpkin
    • Add 1/2 cup chopped Carrot
    • Keep the flame high without mixing it (to caramelize onion)
    • Then add 1 cup chopped Tomatoes
    • Add 1 spoon chopped Beetroot
    • Mix it and add 1 cup Water
    • Cover the lid and cook on medium to high flame for 10-12 min
    • Let all veggies nicely cook
    • Turn off the heat and let it cool down
    • Churn in mixie and sieve the mixture in the same pan
    • (Add a little Water if the soup is too thick)
    • Add some crushed Black Pepper
    • Slightly warm the soup
    • Turn off the heat and add roughly broken Basil Leaves
    • To Make Vegan Cream:-
    • Churn 8-9 soaked Cashews in mixie
    • Take soup in a serving bowl
    • Drizzle vegan cream on top
    • Garnish with a Basil Leave
