Biryani invokes emotions, if not festival then generally a relaxing day, or making it for guest, use any excuse, but Biryani will find it’s way into the menu. Sharing my favourite Veg Dum Biryani recipe today. Showing you from frying onion to giving dum to biryani in this recipe tutorial.

  1. Method

    • Heat Oil in a pan to fry Onion
    • 6 medium Onions thinly sliced
    • Fry them on medium to high heat until nice golden-brown
    • Transfer them on a kitchen towel
    • Further take 1.5 cup soaked Basmati Rice
    • Heat a deep base vessel, add soaked rice
    • Pour some Water in it
    • Add some Whole Dry Spices (2 Bay Leaves, 1 Cinnamon Stick, 1
    • Star Anise, 1 Mace, 5-6 Black Pepper, 2 Cardamom, 2 Cloves)
    • Add Salt as per taste
    • Add 1/2 tsp Ghee
    • Add cover the lid and cook rice 70%
    • (Do not overcook the rice)
    • Further add 2 tbs Oil in the same pan of fried onion
    • Add 1 tsp Shahjeera
    • Add 1 Cinnamon Stick, 2 Cloves & 1 Cardamom
    • Add 1 tsp Ginger-Garlic Paste
    • Add 2 slit Green Chillies
    • Add 1 tsp Turmeric Powder
    • Add 1.5 tsp Red Chilli Powder
    • Add 2 tsp Biryani Masala
    • Add 1.5 cup Chopped Vegetable (Carrot, Cauliflower & French Beans)
    • Add 1/2 cup Green Peas
    • Add Salt as per taste
    • Give it a good mix
    • Add few Fried Onions
    • Add 1/2 cup Curd
    • Cover the lid and let the veggies partially cook
    • Further take cooked rice in a food strainer (to drain water)
    • To assemble Biryani, take a big pan greased with Ghee
    • Add a layer of cooked rice, drizzle some Kesar Milk on it
    • Add a sabji layer on it
    • Add some fried Onions
    • Repeat the layers one more time
    • Top with the layer of rice
    • Drizzle some Kesar Milk
    • Add Fried Onions, Freshly chopped Coriander & Mint Leaves
    • Top with some Cashews
    • Cover the edges of the pan with roti dough
    • Cover the lid and keep biryani on dum for 20-25 min on low heat
    • Take biryani on a serving plate
    • Garnish with some Coriander & Fried Onions
    • Enjoy your Scrumptious & Flavoursome Vegetable Dum Biryani
