Walnut Caramel Kheer Recipe

Now traditionally when you make kheer, you have to stand before the flame and keep stirring for long; but with this technique you can make kheer in no time. You will also learn how to make Caramel sauce in this vide. And with these large fresh walnuts from Chile, serve it chilled. And why I say fresh is because Chillean Walnuts are grown in Southern Hamisphere and so the harvesting happens around June; and therefore we get the freshest walnuts just around our festive season which starts from August.

  • 3 tbs Rice (soaked for 2 hours).
  • 1 ltr Milk (out of which 1/2 cup is used for cooking Rice, 2 spoon for Caramel & remaining Milk is used in Kheer).
  • 1/3 cup Sugar
  • Spoonful of Water
  • 1 tsp Butter (optional)
  • 7-8 roughly broken Chilean Walnuts + more 3-4 to garnish.


How to make?

To Cook Rice:-

  • In a pressure cooker, take 3 tbs Rice (soaked for 2 hours).
  • Add approx 1/2 cup Milk (from 1 ltr Milk)
  • Cook up to two whistles on medium heat.

To Make Caramel:-

  • Heat a deep base pan.
  • Add 1/3 cup Sugar.
  • Add a spoonful of Water.
  • Do not stir and let it cook on low heat
  • Stir once when it’s golden-brown and turn off the heat
  • Add 1 tsp Butter (optional) and stir well
  • At this step, add 2 spoon warm Milk (from the pan)
  • Stir continuously and keep it aside

To Make Kheer:-

  • Further heat another pan
  • Add remaining Milk and let it boil
  • Add cooked rice into this warm Milk
  • Cook for 5 minutes until the Kheer turns thicker
  • Now add 7-8 roughly broken Chilean Walnuts
  • Add Caramel in the end and mix it well
  • Take it in a serving bowl
  • Garnish with some more Chilean Walnuts
  • Enjoy this Quick & Amazing Caramel Walnut Kheer!
